Good for you Rostis with Herby Cream Fillets
Buttered lemon and pepper shredded cabbage, potato and apple rostis with thyme and juniper sour cream and chicken inner fillets
Serves 4
Finely shred the cabbage and put in a mixing bowl.
Grate in the apple.
Grate the apple into a cloth and squeeze as much moisture out as possible.
Stir in to the cabbage and apple.
Season well and add the potato flour. Mix well.
Shape into rostis and fry gently in the clarified butter until cooked.
Heat the cream, lightly crush the juniper berries and add them along with the thyme then season well. Simmer gently for five minutes then remove from the heat and allow to infuse for 15 minutes.
Cook the fillets according to the directions and serve with the rostis and cream and a sprinkle of dill.
