Wings with lime and smoked chipotle chilli mayonnaise, spring onion and coriander relish with a herby smoky tomato salsa
Make the salsa by first chopping the tomatoes and mixing with the shallot, half the garlic and chilli. Stir in the paprika, a dash of olive oil and the vinegar then stir in the parsley and season well.
Stir the lime zest and juice into the mayonnaise then add the chipotle chilli. Add a little pepper.
Mix the spring onion and coriander together, add the remaining garlic and a little more olive oil then set aside.
Cook the wings and serve with the salsa, relish and mayo.
