  • 2 pollo pizza bases
  • 200g prawns, shelled
  • 4 spring onions, sliced
  • 1 small bunch of coriander
  • 2 cloves of garlic, grated
  • 1 thumb of ginger, grated
  • ½ Chinese cabbage
  • 3 red chillies, sliced
  • A pinch of chilli flakes
  • 40ml soy sauce
  • 150ml hoi sin sauce
  • Rapeseed oil
  • Sesame oil

Hoi sin hot stuff


Heat the oven to 220c.

Spread some hoi sin sauce on the pizza bases and sprinkle over a little of the spring onion.

Cook the bases in the oven for ten minutes.

Meanwhile, heat a wok or sauté pan and add some rapeseed and sesame oil.

Cook the garlic and ginger for a few minutes then add the prawns and cook for two minutes.

Add the cabbage, chilli and soy sauce and toss through.

Cook for one minute and stir in a spoon or two of hoi sin sauce.

Top the pizzas with the prawn and cabbage mix then reduce the pan juices to a sticky and glossy glaze.

Add a little more hoi sin to the pizzas and scatter over the chopped coriander and remaining spring onion. Finish with a drizzle of the pan juices and a sprinkle of the spring onion and serve piping hot.
