  • 2 x pollo bases
  • For the dressing:
  • 8 anchovies
  • 3tbsp mayonnaise
  • A splash of white wine vinegar
  • For the salad:
  • 4 baby gems, cut into wedges
  • A handful of croutons
  • A good glug of olive oil
  • Parsley leaves
  • Rocket to serve
  • Parmesan to serve
  • Salt and pepper to season

Chicken Caesar salad ‘pizza’


Heat the oven to 220c and cook the pizza bases until golden. Leave to cool a little.

Blitz together the dressing ingredients until smooth then stir in a little chopped parsley. Taste and adjust the seasoning.

Spread a little dressing on the bases then toss the topping ingredients with some of it.

Top the bases with the salad, add a little more rocket and drizzle with any remaining dressing. Top with some Parmesan for a lovely savoury flavour and finish with a pinch of black pepper and some more parsley.
