Ingredients

  • 1 griller chicken
  • 4 green chillies
  • 1 large bunch of coriander
  • 2 cloves of garlic
  • 1 thumb of ginger
  • 1tbsp garam masala
  • 1tsp ground cumin
  • 250ml natural yoghurt
  • Water to loosen the marinade
  • Salt and pepper to season

Chargrilled chilli chicken

Method

Blend together the marinade ingredients and add a splash of water to thin it a little.

Spatchcock the chicken and throw away the backbone.

Slash or stab the meat all over and rub in the marinade before covering and leaving to absorb all the flavours.

Heat the grill to high and cook the chicken on one side for 20 minutes until it’s starting to char then carefully flip it and cook the other side until done.

Serve with extra sliced chillies, chopped coriander, flatbreads and lemon rice
