  • 40g chicken per bun
  • 20g Parmesan, sliced
  • 15ml Crème fraiche
  • 2tsp smoked paprika
  • A handful of basil, shredded
  • 2 courgettes, cut into batons

  • 75g cornflour
  • 1tsp baking powder
  • Sparkling water
  • Salt and pepper

  • 3 slider buns
  • Lettuce, gherkins and jalapenos to serve

  • Rapeseed oil for deep-frying

Bite size burger with herby cream and crunchy courgette


Mix together the crème fraiche, paprika and basil, check the seasoning and set aside.

Cook the chicken.

Make a batter with the cornflour, baking powder and sparkling water until it’s the texture of single cream.

Dip the courgettes in the batter and deep-fry in batches until crisp. Sprinkle with the salt and paprika. Drain and assemble the sliders with the chicken, lettuce, gherkins and chillies then top each with a dollop of the crème fraiche mixture. Stick some spikes in the top to hold this delicious mixture together, you don’t want the sliders sliding.

Serve with the hot courgette fries, extra chillies and napkins.
